Preparing the Pancakes

While you can use premixed pancake mix, nothing says “home made” more than pancake batter you make in your own kitchen. Here’s a recipe you can use to make home made pancakes:

Ingredients

  • 2 cups all purpose flour, or 1 cup of cake flour combined with 1 cup of all purpose flour
  • 1 cup of whole milk (you may also use skim milk or powdered milk if you want to store dry batter for use in the future)
  • 1/4 cup of sugar (you can also use honey)
  • 1 teaspoon baking powder (if you’ll use baking soda, mix 3/4 teaspoons of baking soda with 1/4 teaspoon of cream of tartar)
  • 1/4 teaspoon salt
  • 1 teaspoon of clarified butter
  • Bananas, blueberries, cheese, or whatever ingredient you want to use to flavor your pancakes

Steps

  1. Mix all the dry ingredients together in a bowl. Make sure everything is combined completely.
  2. Combine the dry ingredients with the milk and clarified butter until you get a smooth batter. Mix the ingredients with a wooden spoon or a rubber spatula if you like to have lumps in your pancakes. You need to use a whisk if you want smooth pancakes without lumps.
  3. Cook the pancakes in a griddle for 3 minutes each side until set. Set the pancakes aside.

Assembling the Pancake Snowman

Pancake snowmen are a delicious breakfast dishes you can serve for winter breakfasts or morning meals for the Yuletide season. There are two ways that you can make a pancake snowman:

  • Prepare one pancake for each diner, and cut it to the shape of a snowman. For bigger servings, you may want to cook one big pancake for the base, one medium-sized pancake for the body, and one small pancake for the head.
  • Assemble the pancakes on a plate.
  • Dust the pancakes with icing sugar or confectioners’ sugar. You can save on sugar if you sweeten up the pancakes before dusting them with sugar. If you want a really white snowman, you can slather a thin layer of white icing on the pancakes.
  • Make arms and legs out of liquorice sticks, eyes out of candy, and use orange candy for the nose. Serve and enjoy.

If you want to wow your diners with an edible centerpiece for the winter Christmas season, then a pancake snowman cake may just be the thing for you:

  • You need three “balls” for your pancake snowman; one for the base, one for the body, and one for the head. Prepare as many pancakes as you can so that you can make those three balls for the snowman. You’ll need some small pancakes for the top and bottom of each ball, and different sizes of pancakes to form the ball.
  • Starting with the base, build up the ball of pancakes by sticking a small pancake into a small skewer. Stick in more pancakes to the skewer, building up from the smallest to the biggest. You may need to attach more skewers to the pancake ball to support the weight of each cake so that the snowman would not sag at its widest parts.
  • As soon as the snowman is fully stacked and assembled, cover it with light honey and slather on white icing. Give it its candy eyes and licorice limbs, just as you would with a pancake snowman on a plate.
